New year, new opportunities! Tomorrow I will finally start living as I learn! Project Healing Leaky Gut, here we go! This project started January 2016.
It will be ongoing for 30 strict days, where my focus will be to eat food that is nutritious as well as anti-inflammatory. This includes eliminating soy, dairy, eggs, caffeine and nuts from my diet and then testing and reintroducing them one at a time again during the month of February (but only if my body allows). The goal is to try to understand which of the eliminated products doesn't work for me, i.e. to try to understand what it is that gives me inflammation and a leaky gut. Description in detail of this method will come in a later blog post.
My personal goals while doing this project are to start feeling better and having more energy, giving my body a break from everything it shouldn't be taking in while giving myself a fresh start. I also want to feel more inspiration when I step into the kitchen to cook.
I will be doing this project openly and sharing recipes and experiences along the way - more on my thoughts on what this can or should lead to in a later blog post.
My ambition is to create a menu that is easy to follow and that will be appreciated by children, while staying time and cost efficient,. I see this as the biggest challenge (along with ditching coffee). I will be testing existing recipes and of course creating new ones, all based on careful choices of ingredients. Cooking from recipes is not something I currently do. I'm not a recipe girl, plain and simple, but I will try to become one...
I will share my knowledge about food and what makes us feel good to eat and what to avoid and during the project.
I want to test how much change I will notice by simply changing my diet without buying a lot of supplements. My theory is that I will get very far by "just" changing my diet.
I will also give tips for lifestyle changes that are important for general well-being, but now we take it one step at a time, so we don't lose focus and motivation.
